Join James Beard Foundation Award “Rising Star Chef of the Year” semi-finalist nominees Valerie and Nando Chang of Itamae 板前 for LA COCINA DE BALTA – a pop-up at St. Roch Market Miami featuring northern Peruvian cuisine inspired by their aunt, Balta.

Family has always been at the center of the Chang family operation. Sister and brother chef duo, Val and Nando Chang, have followed in their father Fernando Chang’s footsteps since emigrating to the U.S. from Peru years ago. Growing up in the kitchen, they honed their techniques by learning at their father’s side and admiring their aunt Balta’s cooking in Peru. Balta is the driving force behind the siblings’ passion for food and has always been an important culinary figure in their lives. The menus at La Cocina De Balta reflect Balta’s signature dishes as well as a glimpse into how they were eaten at home each weeknight around the Chang family dinner table.

Each weekend at La Cocina De Balta, Val & Nando will feature a unique menu including six dishes and one dessert. These dishes will be offered in the same format that Balta prepared them in her own kitchen - she rarely ever repeated dishes and she was very particular about which were paired with one another at the table.
