Family runs deep at Coop, where brothers Ruben, Robert and Giancarlo Rodriguez whip up Southern staples inspired by their family road trips through Georgia, North Carolina, and Tennessee. In 2016, the brothers drew from their childhood memories and opened Barn Bites, a pop-up in Hollywood’s Yellow Green Farmers Market. Two years later, Ruben Rodriguez brought the brothers’ culinary vision to life at St. Roch Market Miami with Coop. Chef Ruben, who trained under Govind Armstrong, leads the Southern stall and offers classics like from-scratch buttermilk biscuits with candied bacon butter and 25-hour brined fried chicken served on a cheddar chive waffle.
